Selectio is the fruit selected from the best estates and native varieties,
together with some Chardonnay, with special importance to the Xarel·lo,
which is the “soul” of the cava and provides a major structure and volume in the mouth.
A cava that goes beyond the tradition, but without forgetting it.
54% Xarel·lo, 30% Chardonnay, 11% Parellada & 5% Macabeu.
Poultry or fish stew, goat melted cheese with nuts
Serve at 6-8ºC.
Fermentation at 16ºC in stainless steel tanks for two weeks. Second fermentation in bottle, following the traditional method, with ageing for approximately 86 months.
No oak ageing.
A delicate cava, with golden notes and extraordinary bubbles that from a persistent crown.
Subtle aroma of mature fruit, also from ageing, with creamy notes.
In the mouth it reaffirms its elegance, providing to be full with good length.
