The expression of the soil, the tradition of Xarel·lo
The expression of the soil, the tradition of Xarel·lo and the work of perfecting these in the cellar to extract the maximum potential.
The notes of caramelized pears from the Xarel·lo combine with the creamy notes of Crème Anglaise; coming from the prolonged contact with the lees.
A delicate balance between freshness and creaminess.
Oysters and shellfish, poultry and grilled fish.
Serve at 10-12ºC.
After a light skin maceration during four hours, the grapes were lightly pressed, and then fermented in stainless steel tanks during 18 days at an average temperature of 16ºC. After finished fermentation the wine was kept in contact with the thin lees from the fermentation during 3 months with daily battonages
Very pale yellow with green tinges. Bright and clean.
The very varietal nose clearly combines the aroma of mature pear, almost caramelized, and banan with creamy notes proceeding from the work of the thin less made in the tank.
On the palate, the wine is fresh but surprisingly ample with a good balance and acidity. It reminds us of a pear Tarte Tatin with Crème Anglaise.
