42% Xarel·lo, 31% Macabeu, 27% Parellada cultivated applying Organic & Biodynamic farming.
Seafood, rice, pasta and grilled fish.
Serve at 6-8ºC.
Fermentation at 16ºC in stainless steel tanks for two weeks.
Second fermentation in bottle, following the traditional method, with ageing for approximately 24 months.
No oak ageing.
Golden yellow color, a result of its longer ageing.
On the nose it is intense, with notes of brioche and mature fruits.
In mouth it is soft and balanced, which shows good structure. The secondary aroma from the ageing dominates, with light toast and hints from yeast. Long and complex finish.
